This 8-week course offered by the Wagner Free Institute of Science and is taught by Professor Paul Angiolillo. It will explore the kitchen as a laboratory and the scientific foundations of cooking and cooking practice. In particular, the chemistry and physics of food preparation will be discussed in a scientific landscape.
