Dogfish Head has built a reputation for being willing to experiment with unusual ingredients and for pushing the boundaries of what beer can taste like, so when they announced they were making an Imperial pale ale brewed with red rice and Wasabi, it was logical to assume this would taste absolutely wild. The real surprise here is that this isn’t the scorchingly unusual beer you’d expect. Bready malts with a touch of caramel are offset by mild, citrus-touched hops. This brew is a robust 8 percent ABV, but you’d never know; there is no alcohol burn and it’s soft on your palate. The Wasabi adds an herbal, almost vegetal quality, and adds only the faintest hint of heat to the back of each sip. You don’t expect subtle and drinkable from a Dogfish brew made with Wasabi, but this is exactly that. Try it at The Pour House Exton.
