Take a big, hefty saison and allow it to make friends with a wine barrel. Make sure that wine barrel had previously made friends with some wild yeast, specifically Brettanomyces. Then sit back and wait. That’s what Epic Brewing did in this collaboration with Crooked Stave Artisan Brewing. The result is something that carves out its own deliciously unique space in the beer world. This brew pours a wonderfully clear gold with a luscious white head, while the aroma is a shocking surge of sour apples and barnyard funk. The taste almost completely lacks the big sourness you get from the aroma, though, replacing it with mild funk, grassy spring fields, and the slightest hint of grapes. This is a complex tapestry of flavor that takes some time to unravel—but you’ll enjoy every minute of the process.
