If they're not creating hybrid beers, Delaware's Dogfish Head is diving back into ancient history to dig up (sometimes literally) hints of what beer used to be like. Kvasir is one of these “ancient ales,” a sort of grog, sort of beer beverage challenging ideas of what beer is. Derived from diggings in Scandinavia, the recipe includes familiar ingredients like honey and cranberries alongside what-the-hell-IS-that’s like lingonberry and myrica gale. An aroma of cranberry and honey floats atop the glass while berries and a strong wash of honey and syrup dominate the flavor. This is like one of those candies your grandmother had in that glass dish atop the doily. Kvasir’s finish laces with sharp herbal bitterness assuring drinkers it’s not all about honey.
