Thin Mint Sundae

One of the best ways to use Thin Mints in recipes is to pulverize them into a crumble for cakes and toppings. This way you can’t keep track of how many you’ve eaten. Serves four.

>> 1 sleeve Thin Mint Cookies

>> 1 gallon vanilla ice cream

>> 12 fresh strawberries, thinly sliced

>> 1 cup whipped cream

>> 1) Have four ramekins on hand.

>> 2) Place cookies in a Ziploc bag. Using a rolling pin, grind cookies into a chunky crumble.

>> 3) Sprinkle the crumble into the bottom of the ramekins.

>> 4) Soften the vanilla ice cream, and spoon over the crumble, filling the ramekin and flattening the surface. Layer the sliced strawberries on top of the ice cream, and serve with whipped cream.
