Baked Oysters

This quick recipe works well at home. Serves two.

>> 12 shucked fresh oysters (juice reserved)

>> 3 tablespoons butter

>> 1 garlic clove, minced

>> 1/2 cup breadcrumbs

>> 2 tablespoons grated parmesan

>> 2 teaspoons chopped fresh parsley

>> salt and white pepper to taste

>> lemon wedges for serving

>> 1) Set oven to 400 degrees.

>> 2) Arrange oysters in a small casserole.

>> 3) In a small skillet, melt the butter. Add the reserved oyster juice. Stir in the garlic and breadcrumbs and saute over medium heat until mixture is golden. Remove from heat and stir in parsley. Spoon mixture over oysters, season with salt and pepper and top with parmesan.

>> 4) Bake oysters until bubbly (about 10 minutes). Serve warm with a squeeze of lemon.
